Donte Shaw, executive chef at Café Navarre, was putting the final touches on a dish inside the kitchen of the downtown South Bend restaurant. He placed a sunny-side up egg on top of wheat and rye toast with vibrant green avocado spread.
Giving the dish more pops of color, Shaw added cut cherry tomatoes, orange slices and arugula — with the entire dish resting on a deep-red bed of beetroot puree. After giving the dish a shower of tomato vinaigrette, Shaw was finished with one of the many items being featured on a special Easter brunch menu at Café Navarre.
A number of restaurants in the area are offering special Easter brunch and dinner menus and buffets, but whether you plan on eating out or having the family over for an Easter egg hunt, consumers will spend more than ever for the holiday.
Spending to celebrate Easter is expected to reach $18.4 billion this year, up 6 percent from last year's record-setting amount, according to the National Retail Federation. This is an all-time high in the 14 years the NRF has tracked Easter spending.
